FoodNotes | Cupcakes

So, for a family gathering yesterday I made some very simple yet delicious cupcakes with my Mom; I would've made something a little more fancy and special, especially because it's Christmas but I had headed out to the Boxing Day sales at 5AM, so I was quite exhausted. Nonetheless, here they are! Along with the recipe!
vanilla and chocolate flavoured ones!



So here's what you need:
Makes 16
200g butter
200g caster sugar
4 eggs
200g self-raising flour OR 150g self-raising flour and 50g cocoa powder (for the chocolate cupcakes)
splash of milk
1tsp vanilla extract

Equipment:
2 Mixing bowls
Electric whisk
Spoons
Sieve
Cupcake Tray
Cupcake Cases

For buttercream icing:
140g butter
280g icing sugar
a splash of peppermint flavouring (for optional peppermint flavoured icing)
food colouring of your choice

Method:
1. Pre-heat oven to gas mark 4
2. Combine butter, eggs and sugar together. Whisk until smooth and creamy
3. Add flour, milk and vanilla extract
4. Whisk until combined
5. Spoon into cupcake cakes, about 2/3 full
6. Bake for 18minutes
7. Take out and leave to cool

Buttercream icing method:
1. Combine butter and icing together till creamy and a thick consistency
2. Add the liquid ingredients to a desired flavour and/or colour.
3. Pipe using piping bags onto cupcakes
4. Finish off with decorations of your choice
